Wow… Just a couple of weeks after I wrote my initial review, I read that the founder of the Lunchbox Laboratory passed away. Even though I have never formally met Scott Simpson, his story touched me in ways that I can not describe. Bottom line, his creations were inspirational. The Dork Burger was simply genius! His burgers led me to start grinding my own meat and put together my own mixture of different cuts of beef.

On my previous two visits to the new Lunchbox Laboratory, I was really disappointed by the changes. My friend Traca at Seattle Tall Poppy, gently suggested that I be patient and the restaurant may be working the kinks in the new menu. She was right because on this visit the Dork burger was back, the service was fantastic (the server’s name was Anna) and the menu was back to being innovative. The burgers are still smaller than they used to be, but this time I did feel that I was getting a good value for my money. The Lunchbox Laboratory goes back into my top three best burger places in Seattle. Scott, thank you for your vision and you will be missed.
